72-Hour Summer Spare Ribs

Spare ribs are a tasty treat that’s perfect for enjoying during the summer months. However, with an Alto-Shaam Backyard Smoker, you don’t have to restrict yourself to only enjoying delicious barbecue ribs when the weather is right. These ribs are so easy to make, you may find yourself just looking for an excuse to prepare them for family and friends.

What You Need 

  • 1/2 pound spare ribs per person
  • Rib rub or marinade
  • Wood chips
  • Sous vide bags

Making the Ribs 

Marinade the ribs overnight. About 15 minutes before you begin smoking the ribs, pour the wood chips into a bucket of water and let them soak. Place them in the smoke box, then place a pan of ice on the rack above. Place the ribs on the rack above the ice and let them cook for 15 minutes, then switch to the cold smoke setting for 30 minutes.

Remove the ribs from the smoker and place them in the sous vide bags. Pasteurize the bags in the Alto-Shaam Combitherm oven at 180 degrees. Return the ribs to the smoker at 140 degrees and cook for 72 hours. Right before serving, remove the ribs from the bags and pour sauce over them. Return them to the oven for 10-15 minutes to caramelize. 

Serve the ribs with your favorite barbecue sides and a cold beverage to complete the meal.
